Her story
Lakshmi has been making pickles since she was eight years old, standing on a stool beside her grandmother in their village kitchen in Hassan district. The recipes — raw mango, gooseberry, mixed vegetable — are written in her grandmother's handwriting in a dog-eared notebook she carries everywhere.
After moving to Bangalore with her husband, she began selling small jars of achaar to neighbours informally. Word spread. A local kirana owner asked her for five jars a week. Then ten. But without a FSSAI certification and proper packaging knowledge, she couldn't scale. She didn't know where to start.
The Skillinabox Food Processing course teaches exactly what she needs: food safety, hygiene standards, shelf-life testing, and packaging design. Lakshmi's goal is to launch under the brand name 'Paati's Pickle' within six months of completing the course. Her grandmother's recipes deserve a label.
